Last night was the first time ever that there were no leftovers. Usually there is enough food for a dozen people so we are eating it the next day...maybe I am finally figuring out how to cook for two people :)
This recipe was delicious! The chicken was super moist and just a little hot and spicy from the peppers.
1 3/4 cup chicken broth
2T soy sauce
1T vinegar
1 tsp sugar
1 tsp garlic powder
1/8 tsp crushed red pepper
4 skinless, boneless chicken breasts
Mix first six ingredients in shallow non metal dish (I just put them all together in a large zip lock bag). Add chicken and refrigerate 1 hour. Remove chicken from marinade and grill or broil it 15 minutes or until done, brushing often with marinade.
Heat left over marinade to a boil and serve with the chicken.
I used a little stove top grill which worked out very well. Definitely will be making this again!

Italian Breaded Pork Chops
I have never been much of a pork person, but my husband's dad made pork roast when I first met them and it was awesome! Sadly, I know I can never cook that well, but he gave me the nerve to try pork chops for the first time in my life. (I have always stayed away from them because of the fear of under cooking them.)
Seriously, this recipe is super duper good! We have had it twice now. It takes hardly any prep time and about 25 minutes baking time, so dinner can be served with in an hour.
Here is the recipe:
3 lightly beaten eggs
3 tablespoons milk
1 1/2 cups Italian seasoned bread crumbs
1/2 cup grated Parmesan cheese
2 tablespoons dried parsley
2 tablespoons olive oil
4 cloves garlic, chopped
4 pork chops
Preheat oven to 325 degrees F
In a small bowl beat together eggs and milk. Mix bread crumbs, Parmesan cheese and parsley in separate bowl.
Heat olive oil in skillet over medium heat. Stir in garlic and brown. Remove.
Dip pork chops first into the egg mixture and then in the bread crumb mixture, coating both sides evenly. Brown chops in skillet 5 minutes on each side.
Place pork chops in oven safe pan and bake for 25 minutes, or to internal temp of 145 degrees F.
ENJOY! :)
