Coconut Chocolate Chip Cookies

We finally have some rain, actually lots of rain. These past two days it has been pouring nonstop out of the sky. Why rainy weather makes me feel an urge to bake I do not know, but yesterday, because of the rainy day, these cookies were put on my table an hour after I got home from work. The house smelled absolutely wonderful!
This recipe is super simple and, if there are only a couple people at home, it is the perfect one dozen cookies.

The recipe is as follows: 1/2 C butter, softened
                                     3/4 C sugar
                                     1 egg
                                     1/2 tsp coconut extract
                                     1 C plus 2 T flour
                                     1/2 tsp baking soda
                                     1/2 tsp salt
                                     1 C (6 oz) semi-sweet chocolate chips
                                     1/2 C flaked coconut

Cream butter and sugar in bowl. Add egg and coconut extract; mix well. Combine flour, baking soda and salt; add to creamed mixture. Add chocolate chips and coconut.
Drop by tablespoonfuls 2" apart onto greased cookie sheet. Bake at 375 degrees Fahrenheit for 11-13 minutes or until golden brown. Makes about 1 dozen delicious cookies!
